Creamy Broccoli Soup with Feta Creme
Cosy up with a heart warming Soup!
This is the kind of healthy soup you'd like to share under a cosy blanket or on a tray in the garden. Lots of flavors to inspire the heart and belly. The broccoli soup is accompanied by nuts, herbs and a feta creme, that adds crunch, freshness and delicious creaminess. Its very quickly made, so lots of taste for not so much work. Can it get better?
If you like to make it vegan, swop the feta creme for Cashew butter
with a bit of lemon and sea salt to taste.
Creamy Broccoli soup with Feta creme, Herbs and Nuts
olive oil for baking
500 gram broccoli, washed, and cut to pieces
1 celery stalk, sliced
4 shallots sliced
I clove garlic, pressed
I liter bouillon
salt and pepper
I dl feta cheese
I dl creme fraiche or greek yogurt
basil, a handful chopped mint, a handful chopped
1 dl your choice of nuts (I choose hazelnuts and walnuts), roughly crushed with a mortelor or blitzed in a food processor in rough smaller pieces.
Start with your toppings, place the chopped herbs and crushed nuts in small bowls for serving. Mix the feta cheese with creme fraiche and set aside in a bowl for serving.
Now for the soup! Heat up your pan with olive oil suitable for baking and sauté your chopped broccoli, onion and celery in medium heat while stirring for 2 minutes. Then, add your bouillon, and garlic, leave to softly boil under a lid for 8 to 10 minutes. Mix the soup to a smooth creamy consistency. Pepper and salt to taste. Serve in cups or bowls with the toppings. Enjoy!
Styling tip, I sprinkle a tiny bit of chili flakes or paprika powder on top of it all, just for color the effect (optional).
